CA fruit cold storage

"CA" stands for "Controlled Atmosphere". This refers to refrigerated rooms that maintain an artificial atmosphere that is continuously monitored and kept at constant values (e.g. for oxygen and carbon dioxide) in order to slow down the ripening process of the chilled goods. Removing the natural ripening gas ethylene ensures that the chilled goods remain fresh.
